Aji picante is a popular sauce in Colombia, its fresh and slightly spicy flavour make it perfect as an accompaniment for a wide range of dishes. If you are into fresh salsas, then this one is for you. The cool thing about this salsa is that, if stored properly, the sauce can last several days.

Ingredients
4 tbsp white vinegar
2 tbsp water
1 red chilli
3 tbsp coriander
2 tbsp parsley
Juice of one lemon
½ medium tomato
¼ white onion
Salt to taste

Preparation

  1. Finely chop all the ingredients.
  2. In a mixing bowl pour the water, vinegar, and lime juice and mix well.
  3. Add the vegetables and let the sauce rest in the fridge for at least 20 minutes

Serving suggestion
This sauce goes great with empanadas colombianas, meats, soups, basically everything! Store in an airtight container in the fridge for 3-4 days.
