Chipotle chillies are dried and smoked jalapeños although it can also be made with similar chillies to Jalapeños. The name chipotle means smoked chilli.
The process of making chipotle is relatively long. First the chillies have to be ripe almost to point of being completely dry. They are then harvested and taken to a smoking room where they stay for long hours at a low heat. Chipotle chillies can be bought dry whole and powdered or in a sauce, usually canned, made with tomato puree, spices and unrefined cane sugar.
The use of chipotle adds, delicious spicy and smoky notes to the dishes.
