An easy version of Mexican pickled onions that go great with everyone’s favourite, pork pibil as well as grilled meats. They add a great colour to your dishes as well as a distinctive tangy taste.

1 medium red onion
¼ tsp oregano
½ cup white vinegar
½ tsp oil
- In a saucepan, heat the oil and saute the onions for a couple of minutes.
- Pour the vinegar and let it evaporate. Add the oregano and the juice of half a lime, mix everything together, cover and let it rest for a couple of minutes out of the heat.
Pickled onions go great with everything, tacos, tortas, meats, you name it.
