Unrefined whole cane sugar was originally produced as an easier way to transport sugar, Panela is made out of the juice from sugar cane.
Due to the process in which is made, this type of cane sugar is considered one of the best sweeteners as it does not contain any preservatives or artificial flavours.
It is widely used ingredient for sweet and savoury dishes in Latin America and has different names depending on the country:
- Piloncillo in Mexico
- Papelon in Venezuela
- Tapa de dulce in Costa Rica
- Chancaca in Argentina, Bolivia, Chile and Peru
- Raspadura in Cuba, Panama and Ecuador
