Vanilla

Vanilla comes from an orchid native to Mexico, Central and South America. It was originally cultivated on the east coast of Mexico. It then spread to the world following the Spanish conquest.
Its production nowadays is very sparse making it the second most expensive spice in the world (after saffron). If you use vanilla essence in your recipes, it is likely that it’s made with artificial flavouring.
This ingredient adds a delicious and complex taste to dishes. It is mainly used in sweet dishes.
